The love for lamb chops in the Kihara house hold is super-normal. I think if we could we would have it maybe 3 or 4 times a week and feel zero about it. We always have it with potatoes and salad and sometimes when we are on a health journey we skip the salad and have just potatoes. Hahahaha

For some reason I did not discover lamb chops till I was living in Australia for Uni. Now lamb in Ausi is like beef here. It is every where, it is the every day meat and Ausi lamb is awesome it is rated as the best in the world rivaled only by New Zealand lamb. So of course I started eating it and I loved it. When I came back home for some reason I forgot about it, I think coz it isn’t so readily available. Anyway sometime in 2015 someone posted about lamb on Foodies Club Nairobi and I bought some and fell right back in love and made the Mr fall in love too.

I love lamb chops with just some salt and pepper or with Vegeta  an Australian stock powder. These are my go to not only coz they are easy but they also make the lamb chops tasty. When I have time though I love to mix basil and mint the combination is heaven in your mouth. Topped with the herby yogurt dip i’ll share with you guys on Friday. This is a winner.

Basil and Mint Lamb Chops

Prep Time: 30 minutes

Cook Time: 10 minutes

Total Time: 40 minutes

Yield: 4 to 6

Ingredients

  1. 1 kg lamb chops
  2. small bunch of basil
  3. 7 mint leaves (half the amount of basil used)
  4. salt
  5. pepper
  6. Little oil to cook

Instructions

Place the basil, mint, salt and pepper in a mortar and crush into a paste. Spread this on the lamb and let it rest for at least 20 minutes but overnight if possible.

Heat up a grill pan, cast iron skillet or pan till hot. Place the chops on the pan cooking for about 3 mins on each side.

Serve while hot with the herby sauce
