Fried rice is one of those dishes that are really easy to make and are a really great way of using up left over rice and using up veggies before they go bad. I use an old recipe for the left over rice. The sweet and spicy coconut rice is quite a win. Find the recipe here.

Coconut Fried Rice


  1. 1.5 large onion chopped
  2. 2 tablespoons vegetable oil
  3. 2 cloves garlic, crushed
  4. small piece of ginger, minced
  5. 1/2 cup carrot, finely chopped
  6. 1 hoho, capsicum, diced
  7. 2 cups mushrooms, sliced
  8. dhania
  9. 4 cups left over coconut rice


Cook the onions till translucent, add the ginger and garlic and cook till fragrant

add the mushrooms, cook down then add the hoho then the carrots.

After 2 minutes add the rice, mix well then add the soy sauce,

Cook for 4 to 5 minutes till warmed through. Add dhania and serve immediately
