Sometimes I sit in a corner and wonder why Kenyans are so reserved with their foods. Rice is either steamed or pilau, sweet potatoes are boiled or cooked in stew, sausages are grilled or pan fried. How boring is life that is lived in a box!!!! The world of food should never be put in a box. There are 10’s of ways to prepare any one dish. Altering a dish by even one ingredient can give your meal a new twist.
This sausages are so easy to make, cook your sausage, caramelise your onions, add some sweet chilli sauce add back the sausages and BAM!! a pimped up sausage meal.You can have them as is with pancakes in the morning or stuff them into bun and make a sandwich. It;s a breakfast, brunch and light lunch dish. How much better can it get?
Spicy Pork Sausages in Sweet Chilli Caramelized Onions
- 400g spicy pork sausages
- 3 large onions, sliced
- small knob of butter
- olive oil
- 1 teaspoon brown sugar
- 3 tablespoons African Kaya's Sweet Chilli Sauce (buy[here http://africankaya.com/shop/product/sweet-chilli-sauce-200g/] )
- Basil, chopped
Cook sausages till well cooked and evenly browned. Set aside
in the same pan add the butter and a little olive oil (if the oil remaining from the sausages isn't enough). add the onions and cook on low heat, stiring once in a while till caramelized. around 15 mins.
Once caramelized add a little brown sugar, mix well then add the sweet chilli sauce. Once it starts to simmer add the basil mix then add in the sausages immediately.
Cook till heated through.
Serve with pancakes, in a hotdog bun as a sandwich, with rice or potato mash.
