I saw this recipe in the April issue of Good Food and I thought “OOOOHHH” interesting. The issue came with all sorts of toppings but thought I’d try this one beacuse it had the least calories. I think what I liked most about it is how quick it came together, in less than 10 minutes I had a meal on my plate and a quite filling one at that. I think this would make a good hangover meal or on one of those nights when you just cannot be bothered to cook or even a lazy Sunday afternoon. Well hope you’ll like it. HAPPY COOKING!!
OOOH and please forgive me for the poor quality photos :-/
Sweet Chilli Veg and Salami Omelette
- 150g pack of stir fry vegetable mix
- 2 teaspoon soy sauce
- 2 teaspoon sweet chilli sauce
- ¼ teaspoon each of cinnamon, cloves and white pepper
- 2 eggs
- 2 slices of salami, diced
- 25 g grated cheddar
Cook the stir fry veggies with 1 tablespoon of olive oil in a large pan or wok on high heat for about 2 mins
Add the salami. Add the spices, soy sauce and sweet chilli sauce.
Meanwhile, whisk the eggs in a bowl and cook in another large pan.
Tip the veggies mixture onto the surface of the omelet before it completely sets then sprinkle the cheese on top
Roll up then drizzle with sweet chilli sauce
Work very fast so as to avoid over cooking the egg like I did
