I have told my family to get me one as a gift. I really really wanted one. It was the next gadget for me to get after I got a food processor. Unfortunately they were not readily available yet when I wanted one. But that did not stop me from lusting. Sometimes what seems unattainable is what the heart years for the most right? Pinterest has been full of so many slow cooker meals in the last couple of years. When I travelled to the US 2.5 years ago slow cookers were so cheap, like Ksh 3,000, but thinking about carrying all those KGs as opposed to buying and carrying shoes just was not working for me. So I did not buy. In 2014 I got my food processor which I absolutely adore. I use it for so many things. We had a chama (a social group) where we bought kitchen items for each other worth about Ksh. 22,000 per year, and with that I was able to buy a food processor and remain with change for a few items. I really like that chama coz of what it did for me but unfortunately it broke up due to differences within the group :-/. My plan for  2015 was to buy a slow cooker with the money from the chama but with new developments that just seemed like a pipe dream. Until I opened my presents the day after my birthday party. How excited was I???? walalala I jumped up and down like a kid who had just received their favourite toy for christmas. A few of my lovelies from Foodies Club Nairobi (a foodie group on Facebook) had come together and bought me something I had lusted over for sooooo long. I felt so special. Like these people actually think of me, these people who I met on the internet. It actually made me believe that there are good humans out there. Since I got this gadget I have  made so much with it, ox tongue, pumpkin soup, slow cooked t bone and mushroom which I think has to be one of my favourites. But my absolute favourite is this slow cooker pulled pork. And do not worry, if you do not have a slow cooker you can still achieve this in your oven or the traditional way in a smoker. It is essential that you use the pork shoulder part of pulled pork. This cut gives maximum flavour and a melt in your mouth texture due to the fat content it has. What I love most about slow cookers is that there is no need to check on your food. Put your food in, start the cooker and go on with your business. I have cooked things overnight while I slpet, all day while I was at work. It really is the easiest thing ever. What kitchen gadgets do you absolutely love?   Happy cooking!!

The Weekend project: Slow Cooker Sweet Chili BBq Pulled Pork Sandwiches

Prep Time: 4 hours

Cook Time: 7 hours

Total Time: 11 hours

Yield: 8 to 12

Ingredients

  1. 1 pork shoulder (about 2-3 kgs)
  2. 4 cloves of garlic, crushed
  3. small piece of ginger, crushed
  4. Salt and pepper to taste,
  5. 1/2 cup of water or stock
  6. 1 cup African Kaya's Sweet chilli sauce, available in our online shop
  7. 1/2 cup of ketchup
  8. 1/2 cup smokey barbecue sauce
  9. 1/4 cup of apple cider vinegar
  10. 3 tablespoons brown sugar
  11. Burger buns to serve

Instructions

marinate the prok shoulder in the garlic, ginger, salt and pepper for at least 4 hours.

Place the pork shoulder in the slow cooker and pour over the water or stock. Cook on high for 4 to 5 hours or on low for high for 6 to 7 hours.

Mix the rest of the ingredients and return too the cooker for 1 more hour.

Remove from the slow cooker and shred using two forks. Once fully shredded return to the cooker and mix with the sauce until well incorporated.

If using an oven preheat the oven to 150 degrees. Put in the oven for 6 hours. Pour the sauce and return to the oven for an hour then shred as above and return to the pan with the sauce and mix well.

Serve with burger bun and a coleslaw

It tastes even better the next day

I bought the shoulder at 400ksh per kg. That comes to ksh 1200. The sweet chilli sauce is 400, I used half at Ksh 200. The ketchup is 120, I used some worth 40sh. Apple cider was worth around 30sh. bbq sauce ksh 80 Total cost including spices 1700.I made more than 12 servings Cost pp 140
